Trick-Or-Treat

This Halloween, I customized my own version of trick-or-treating to make it age appropriate and suitable for the schedule of a girl-on-the-go! You're probably wondering, "What is she talking about??" Well, I'll explain...

The TRICK became that I wasn't at home to answer the door for the kiddos when I really was...I know, so mean, so lame, so bah-humbug of me! BUT, in my defense, I have a major event on Tuesday, which demanded my attention and preparation over the weekend. I offer my apologies to all of the neighborhood kids though!

The TREAT is way more exciting than the trick. This time of year calls for festive food choices, and I had been craving pumpkin bread. Bethenny Frankel's Naturally Thin book offers great recipes alongside her food and lifestyle advice. But her book was lacking anything with pumpkin as the main ingredient- bummer.

Imagine my surprise when on Thursday, her e-newsletter arrived in my inbox and it featured this recipe for Pumpkin Spice Muffins!!! Y'all, I swear, I am horrible- at best- at baking but these muffins were so easy to prepare and so delicious, I made two dozen and have plans to make more!!!

All of the ingredients- including raw sugar, cinnamon, nutmeg, cloves and vanilla...oh, and pumpkin!

Cups are 2/3 full and ready to bake in the oven.

I have to mention that Bethenny suggests baking these for 40-45 minutes, but, at least with my own oven, baking them for only 30 minutes yielded a much less crisp and crunchy product. The slightly undercooked muffins tasted better and seemed fluffier.
